  • 3 tablespoons (5 g per tablespoon) flour
  • 3 tablespoons (15 g per tablespoon) of honey
  • 1 pk with fresh ricotta cheese, low fat (50 g)
  • 1/2 cup neutral vegetable oil (100 ml)
  • 1 teaspoon (2 g) baking powder
  • 1 teaspoon (5 g) powdered cinnamon
  • 3 large eggs (80 g per egg)
  • 4 large ripe bananas
  • 1/2 cup oats (100 g)
  • A pinch of salt

Preparation procedure

  • Start by sifting and mixing all the dry ingredients (flour, salt, cinnamon and baking powder) and set them aside.
  • Separately, beat the eggs with the oil until it starts to froth a little.
  • Mash the 4 bananas well and add the honey until you have a lot.
  • Mix together the banana puree, ricotta, sugar and the mixture of eggs and oil.
  • Add the oats and the dry ingredients to the mixture, little by little, and gently mix together the wet and dry ingredients.
  • Put butter and flour in a cake tin and pour in the mixture. Place the cake in a preheated oven on medium heat (180ºC).

  • 300 g cornstarch or ready-mix for celiac baking
  • 1/2 teaspoon (2 g) dried ginger
  • 1 teaspoon (2 g) vanilla essence
  • 1/2 cup neutral vegetable oil (100 ml)
  • 1/2 cup almond milk (100 ml)
  • 1 teaspoon (5 g) baking powder
  • 1 teaspoon (5 g) cinnamon powder
  • 200 g peeled and chopped walnuts
    3 large ripe bananas
  • Grated orange peel of 1 orange

Preparation procedure

  • Begin by mixing the already sifted dry ingredients (cornstarch, baking powder, salt, cinnamon and dried ginger) and set aside.
  • Mash the ripe bananas with a fork until you have a mash.
  • Whisk almond milk  together with oil and sugar until slightly frothy.
  • Add vanilla essence, orange peel and mashed bananas to the mixture.
  • Little by little, add the dry ingredients, without stopping the stirring, until you have a smooth, firm dough.
  • Finally, add the chopped walnuts and mix them in.
  • Pour the mixture into a cake tin greased and floured, and place it in a medium hot oven (180ºC).
