Benefits of oats

Oats are very healthy

Oats are one of the best grains you can include in your diet, as they provide the following health benefits:

  • A great source of vitamins, minerals and amino acids, which provide large amounts of energy and liveliness.
  • Balances the nervous system and soothes stress, nervousness and anxiety.
  • Improves digestive problems.
  • Helps the intestinal tract.
  • Is rich in soluble and insoluble fiber and is a very filling food.
  • Regulates blood sugar levels and prevents anxiety caused by sweets.
  • Has diuretic properties that help fight fluid retention and bloating.
  • Reduces high cholesterol levels.
  • The content of vitamins B and E as well as minerals such as zinc help you restore the condition of skin, hair and nails.

Some people may experience acid reflux or other stomach discomfort from eating raw oats. In these cases, it is better to eat this grain boiled or use oatmeal when baking.

Better without gluten and lactose

Better without gluten and lactose

Many people with celiac disease do not eat oats. Although they do not contain gluten, they can be contaminated by places where oats and wheat are processed since they may have small traces of gluten.

Therefore, if we want this recipe to be 100% gluten free, we must choose oats with a specific label.

More and more people are showing different levels of gluten and lactose intolerance. This is a consequence of counterfeiting and poor food quality, as well as poor intestinal health.

We will therefore give you an easier-to-digest and easy recipe that everyone in the family can eat.

Gluten-free and lactose-free oatmeal muffins

Oatmeal muffins

Ingredients:

  • 200 ml vegetable milk (coconut, oats, rice, almonds)
  • 300 g ground oats
  • 100 g rice flour
  • 200 g brown sugar
  • 110 g coconut or sunflower oil
  • 2 eggs
  • 1/2 squeezed lemon
  • Vanilla or cinnamon essence
  • Yeast

If you like the recipe, you can try it with other flavors such as candied oranges, chocolate chips, coconut mass, cocoa, etc.

Here’s how:

  • First, preheat the oven to 200 ° C
  • Beat two eggs, with a whisk or by hand. It is important to make this step intense to make the muffins airy.
  • Add oil, lemon juice, vegetable milk and sugar, and continue to mix. Then add spices or selected essences (vanilla, cinnamon…).
  • Then mix oatmeal and rice flour in a separate bowl.
  • Gradually add the flour mixture to the other bowl and continue mixing.
  • Finally add the yeast, mix for an extra minute, then the batter is ready.
  • At this point, you should put the batter in the refrigerator for half an hour. This will help the muffins to rise better and stay soft.
  • Fill each muffin tin 2/3 full. You can sprinkle some sugar on top to give them a little crunch.
  • Put the molds in the oven and bake for 15 to 20 minutes at 180 C.
  • Test the inside of the muffins to see if they are cooked through before turning off the oven and letting them cool.

Gluten-free and lactose-free oatmeal muffins: Sugar-free muffins?

gluten-free and lactose-free oatmeal muffins: Sugar-free muffins are a good alternative

Although we used brown sugar in this recipe – which is much healthier than white sugar – we can also try sweetening the muffins with honey, molasses, agave or maple syrup.

We can also use stevia, a natural sweetener, but it must be purified, transparent and with the least possible taste.

We can start by combining it with sugar and gradually add more to the next recipe if we like the taste. That way, our muffins become even lighter and healthier.
